This is a recipe that Charity emailed me and wanted me to post for her. It sounds pretty yummy!
Apricot/Peach Slush
1 46 oz. bottle apricot nectar
3 c. pineapple juice
1 12 oz. can frozen orange juice concentrate, thawed
1/3 c. frozen lemonade concentrate, thawed
1 2 liter bottle ginger ale, chilled
Apricot or peach slices
1. In a 3 quart plastic freezer container, combine first five ingredients. Seal and freeze at least 24 hours or up to 1 week.
2. To serve, let frozen mixture stand at toom temp. for 30 minutes. Scrape into a slush. For each serving, fill a glass two-thirds full with slush. Carefully add ginger ale, stirring gently to mix. Garnish with apricot or peach slice. Makes about 24 servings.

Kraft Foods Recipes
No one has been posting any recipes for me! That's okay though. I just signed up for this free deal on the Kraft website where they will send recipes to me 5 times a year. Kraft has teamed up with the doctor who came up with the South beach diet and they are going to start making south beach friendly foods. They also have some south beach recipes that look pretty tasty. Eric and I have really enjoyed this diet. We feel so much healthier and have flattened our bellies as well. We haven't even been that strict with it and it has still worked. There is a huge variety of recipes and things you can eat with it too! I haven't felt like I was missing out on anything. Chocolate Covered Strawberries
This is a good V-day recipe. I know V-day is over, but I needed to add a recipe for February and thought this was appropriate. I made it on Valentines Day for dessert for Eric and me. It is really good! I was impressed! I got it from the South Beach cookbook. It is okay for phase 2 of the diet since it has fruit.
6 T fat-free plain yogurt
6 T sugar-free chocolate syrup
1 t thawed frozen orange juice concentrate
Strawberries
Whip yogurt, chocolate syrup, and orange juice concentrate with electric mixer in a small bowl. Cover and chill until ready to serve. Serve with the strawberries for dipping!

Tuna Surprise
Sorry it's taken so long to put up another recipe, but I am about out of them now! Eric and I are going to try to start eating healthier by going on the South Beach diet, so if anyone has any good healthy recipes we would appreciate them!
This recipe isn't the most healthy, but it is quick and cheap. My mom always liked to call it the poor man's meal. It never really had a name until Eric decided that it should be called tuna surprise. I don't like seafood, or tuna for that matter, but this is one way that I will eat it. This recipe may sound a little weird to some of you, but I promise, once you try it, you will like it.
1 can of ready made biscuit dough (enough for about 10 biscuits)
6 oz can of tuna in water
4 tablespoons butter
4 tablespoons flour
Salt & pepper to taste
1 1/2 - 2 cups milk
Open can of biscuit dough and flatten each biscuit on a cookie sheet. Put a spoonful of tuna in center of each biscuit and fold biscuit in half, pinching the edges together. Be careful no to get any tuna on the edge of the biscuit where you pinch it together or it will pop open in the oven. Cook these according to the directions on the biscuit can.
While the biscuits cook, heat up a sauce pan(medium heat) and melt butter. Add flour and salt & pepper to the butter until completely mixed. Slowly add small amounts of milk and stir until sauce is the consistency that you prefer.
When biscuits are done, put on plate and pour sauce on top. It basically tastes like biscuits and gravy!

Roasted Chicken & New Potatoes
Here is my recipe for December. It is a recipe I got from my Betty Crocker Cook Book. It is really easy and quick to make. It tastes really good too!
1 1/2 to 2 lbs. broiler-fryer chicken pieces, skin removed
1 lb. new potatoes, cut into fourths
2 T. chopped fresh or 2 t. dried basil leaves
1 T. chopped fresh or 1/2 t. dried thyme leaves
3 T. olive or vegetable oil
1 t. garlic salt
Heat oven to 375 deg.
Place chicken and potatoes in ungreased rectangular pan, 13*9*2 in. Mix remaining ingredients; sprinkle over chicken and potatoes.
Cover and bake 30 min. Turn chicken and potatoes. Bake uncovered 20 - 30 min. longer or until juice of chicken is no longer pink when centers of thickest pieces are cut.

Chicken Diabelo
It is time for a new recipe, so this is my recipe for this month. It is a Recipe I got from my friend, Ruth, when I was down in Corpus Christi. It is super easy to make and tastes really good. It tastes like some kind of gourmet meal I think. We usually make it with green beans and mashed potatoes.
Boneless skinless chicken thighs (you can use chicken breasts if you don't like dark meat, but it doesn't taste near as good as using thighs)
4 T butter
1/2 c. honey
1/4 c. mustard
1 t salt
1 t curry powder
Melt butter and mix with honey, mustard, salt, and curry powder. Pour half of mixture over chicken and bake at 375 deg for about 20 min. Then remove from oven and pour remaining mixture over chicken and bake for an additional 25 min. Then serve with your favorite side dishes!

Sangria
Here is my recipe for this month. It is a recipe that I got from my Betty Crocker book. I've made it several times and really enjoy it. It is really easy and pretty cheap to make. I usually double the recipe because it really only makes like 4 servings and if you are serving it to other people, it won't last long.
2/3 cup lemon juice
1/3 cup orange juice
1/4 cup sugar
1 bottle (750 ml) dry red wine or nonalcoholic red wine
lemon and orange slices if desired
Strain juices into 1/2 gallon glass pitcher. Stir sugar into juices until sugar is dissolved. Stir wine into juice mixture. Add ice if desired. Garnish with lemon and orange slices.

Meat Loaf Cordon Bleu
I am going to try to start adding a recipe every month, so this is my one for Sept. This is a recipe that I got from the pampered chef when I ordered my stone loaf pan. I don't really like traditional meat loaf, but I will eat this one. It is really good and Eric loves it! It's kind of high in fat, but that's okay every once and a while, right?
2 eggs
1/4 cup minced fresh parsley, divided
1/4 cup bread crumbs
1/2 cup chicken broth
2 cloves garlic, pressed
2 teaspoons salt
1 teaspoon tarragon
1 teaspoon dried mustard
1/4 teaspoon ground black pepper
2 lbs lean ground beef
1/2 cup chopped green onions(green portion included)
1 tablespoon butter
1 cup shredded swiss cheese
2 oz prosciutto or other smoked ham, chopped coarsely
Preheat oven to 350 deg. Beat eggs. Add 2 T parsley, bread crumbs, broth, garlic, salt, tarragon, mustard, and pepper. Beat well. Mix in ground beef. Set aside.
Saute onions in butter until soft. Blend cheese, ham, remaining parsley and onions in a medium bowl; set aside.
Divide the meat mixture into 2 equal parts. Pat one into loaf pan to form a layer. Top with cheese mixture. Pat remaining meat mixture on top of cheese.
Bake 45 min. Remove loaf pan from oven and drain off fat. Bake an additional 30 min. Cool 15 min., then remove from loaf pan and cool completely in refrigerator. Cut into thin slices for sandwiches. May also be served hot. (We usually eat it hot with a side of green beans or salad or some other side dish)
Yield: 8 servings
Approx 300 calories and 17 grams of fat per serving.

I will start by posting the first recipe. This one seemed to be quite a hit on Melissa's website. I got it from a Family friend at my bridal shower.

1/3 cup of sugar
1/4 cup cider or red wine vinegar
1 clove garlic minced
1/4 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper
6 cups torn mixed greens
2 1/2 cups sliced strawberries
1 cup (4 oz) shredded cheese
1/2 cup chopped toasted walnuts
Mix first 7 ingredients in jar with lid. Shake well to make dressing. Toss with remaining ingredients.
