Chicken Diabelo
It is time for a new recipe, so this is my recipe for this month. It is a Recipe I got from my friend, Ruth, when I was down in Corpus Christi. It is super easy to make and tastes really good. It tastes like some kind of gourmet meal I think. We usually make it with green beans and mashed potatoes.
Boneless skinless chicken thighs (you can use chicken breasts if you don't like dark meat, but it doesn't taste near as good as using thighs)
4 T butter
1/2 c. honey
1/4 c. mustard
1 t salt
1 t curry powder
Melt butter and mix with honey, mustard, salt, and curry powder. Pour half of mixture over chicken and bake at 375 deg for about 20 min. Then remove from oven and pour remaining mixture over chicken and bake for an additional 25 min. Then serve with your favorite side dishes!
