This is a recipe that Charity emailed me and wanted me to post for her. It sounds pretty yummy!
Apricot/Peach Slush
1 46 oz. bottle apricot nectar
3 c. pineapple juice
1 12 oz. can frozen orange juice concentrate, thawed
1/3 c. frozen lemonade concentrate, thawed
1 2 liter bottle ginger ale, chilled
Apricot or peach slices
1. In a 3 quart plastic freezer container, combine first five ingredients. Seal and freeze at least 24 hours or up to 1 week.
2. To serve, let frozen mixture stand at toom temp. for 30 minutes. Scrape into a slush. For each serving, fill a glass two-thirds full with slush. Carefully add ginger ale, stirring gently to mix. Garnish with apricot or peach slice. Makes about 24 servings.

Kraft Foods Recipes
No one has been posting any recipes for me! That's okay though. I just signed up for this free deal on the Kraft website where they will send recipes to me 5 times a year. Kraft has teamed up with the doctor who came up with the South beach diet and they are going to start making south beach friendly foods. They also have some south beach recipes that look pretty tasty. Eric and I have really enjoyed this diet. We feel so much healthier and have flattened our bellies as well. We haven't even been that strict with it and it has still worked. There is a huge variety of recipes and things you can eat with it too! I haven't felt like I was missing out on anything. Chocolate Covered Strawberries
This is a good V-day recipe. I know V-day is over, but I needed to add a recipe for February and thought this was appropriate. I made it on Valentines Day for dessert for Eric and me. It is really good! I was impressed! I got it from the South Beach cookbook. It is okay for phase 2 of the diet since it has fruit.
6 T fat-free plain yogurt
6 T sugar-free chocolate syrup
1 t thawed frozen orange juice concentrate
Strawberries
Whip yogurt, chocolate syrup, and orange juice concentrate with electric mixer in a small bowl. Cover and chill until ready to serve. Serve with the strawberries for dipping!

Tuna Surprise
Sorry it's taken so long to put up another recipe, but I am about out of them now! Eric and I are going to try to start eating healthier by going on the South Beach diet, so if anyone has any good healthy recipes we would appreciate them!
This recipe isn't the most healthy, but it is quick and cheap. My mom always liked to call it the poor man's meal. It never really had a name until Eric decided that it should be called tuna surprise. I don't like seafood, or tuna for that matter, but this is one way that I will eat it. This recipe may sound a little weird to some of you, but I promise, once you try it, you will like it.
1 can of ready made biscuit dough (enough for about 10 biscuits)
6 oz can of tuna in water
4 tablespoons butter
4 tablespoons flour
Salt & pepper to taste
1 1/2 - 2 cups milk
Open can of biscuit dough and flatten each biscuit on a cookie sheet. Put a spoonful of tuna in center of each biscuit and fold biscuit in half, pinching the edges together. Be careful no to get any tuna on the edge of the biscuit where you pinch it together or it will pop open in the oven. Cook these according to the directions on the biscuit can.
While the biscuits cook, heat up a sauce pan(medium heat) and melt butter. Add flour and salt & pepper to the butter until completely mixed. Slowly add small amounts of milk and stir until sauce is the consistency that you prefer.
When biscuits are done, put on plate and pour sauce on top. It basically tastes like biscuits and gravy!
